Well, don't have backyard lavendar, but I do have a little herb garden right out the front window that includes lavender. All I do is cut a sprig, wash it, remove the needles throwing out the stem, and then chop up the needles as fine as I can get before adding them to the dish I'm cooking. Which so far has been using lavendar in spaghetti sauce. Stuffed in a chicken or thrown in with a roast I'd probably do like I do with thyme and rosemary, which is to just leave it on the stem.
