Because it's an interesting book with beautiful stories, that's why. I believe that the stories in the bible are parables and aren't meant to be taken literally.

I read it as a Christian. Then again as I was questioning Christianity. I will likely read it again as an atheist eventually...I find that it provides insight into what people believe, why they believe it, and how people believed/lived/etc in the past.
I've also read the Qur'an, the Book of Mormon, and the Satanic Bible. Again, they're interesting, and they provide insight into how others believe.
I also find religion fascinating, so I read a LOT about religion anyway.

I've read the Lord of the Rings probably 6-7 times. That doesn't mean I believe it's true.
The bible is an interesting mythology who's stories pervade our culture. It is important to know the bible, Shakespeare and many other pieces of literature.
I've read the bible as an atheist a few times...it's good stuff to know, if not believe.

To atheists, the bible is nothing more than a book. Atheists are often educated far better than the gullible believers and thus are able to read fiction books and not take them literally.

Maybe because they were a Christian at one point.
Maybe because at one point in time they were still searching and viewed Christianity as a viable option.
Maybe simply because they wanted to.

For the juicy parts - sex, and violence.
Some of it is pretty psychedelic, but I don't recommend reading Revelations while tripping...
