Fudge is always a big seller - use the squash as decorations on the selling table.
Irish Crème Fudge
3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray
In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.
Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.
Pour mixture into pans and cool thoroughly before cutting into squares and serving.

The squash would be a great idea. I would recommend making brownies, some sort of pie, rice krispy treats or some sort of cookie. I can tell you what I did at my daughters last back sale and sold out in minutes. I made dirt cups the kids and adults both loved it but it has nothing to do with baking. Fudge sales good to.

I don't know about the squash. You could always try it!
You could make some mints. They're easy to make and very tasty.
Ingredients
1/2 cup (1 stick) butter, softened
1 box (16 ounces) confectioners' sugar, sifted
1 tablespoon milk or cream
1 teaspoon vanilla extract
1/2 teaspoon mint extract
3 drops food dye
Directions
1. Beat butter in large bowl with electric mixer on medium speed until creamy and smooth. Gradually add remaining ingredients and desired food color, beating until well blended and smooth. Remove mixture from bowl. Knead until color is evenly distributed.
2. Shape into small patties. Or, roll gently with a rolling pin and cut into shapes with mini cookie cutters.
3. Refrigerate until ready to serve.

During this time of year, you might actually get some buyers for your squash.....but, have you considered making some breads with it? Zuchini bread is great, as is pumpkin etc. And, they go well at bake sales! Easy items would include Rice Krispy Treats drizzled with chocolate, Cornflake cookies (mix cornflakes with melted chocolate and nuts and let harden); sandwich cookies made by placing frosting between to thin cookies, such as ginger or chocolate wafers; chocolate chip cookie bars go well too. This is also the time of year folks are looking for persimmon bars/cookies and things with nutmeg etc. Enjoy!

A friend of mine made her brownies stand out from the rest of the brownies at the sale by combining 2 boxes of mix and throwing in some add-ins like mini chocolate chips or M&Ms. Because she used 2 boxes, her brownies were always the largest and always sold first! Just grab 2 boxes of mix on sale and there you go.
Also, I agree that rice krispie treats also sell really well. Again, just cut them into big squares. They will sell out first.

Aromatic squash cup cakes if they are still warm will sell quickly. Use plenty of cinnamon, allspice, nutmeg.
Here is one recipe but there are any number you can try.

1 tsp. vanilla
2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1/4 tsp. grated nutmeg
2 c. sugar
2 c. zucchini, grated
1 tsp. salt
3/4 c. light raisins
1 c. oil
2 c. flour
1 tsp. baking powder
1 1/2 c. nuts, chopped
Combine eggs, sugar, oil and vanilla. Beat until smooth. Add grated zucchini and stir to combine. Sift together flour, baking powder, soda, salt, cinnamon and spices. Add raisins and nuts to dry ingredients. Then stir into zucchini mixture. Pour into greased and floured muffin pans or pans with cupcake liners. Bake at 350 degrees for 40 minutes or until muffins tests done.

Is your audience kids because I'm not sure squash will go over well, lol. If it is not a "sweet" bake sale then anything covered in cheese and that is creamy will sale out fast. You could even disguise that squash. Check out allrecipes.com

Homemade mini loaf cakes/breads always sell real well.
Like Banana Nut bread , pumpkin bread or zucchini bread (in mini loafs. You can buy the throw away pans to bake it in and wrap with cling wrap.) This is the first thing I always buy at a bake sale.
