It has traditionally been agriculture, but construction, I believe, is now the biggie. Illegals don't make up more than about a quarter to a third of employees in any sector (proof positive that they aren't doing "jobs Americans won't do,") though in some regions, they may dominate a given job type completely.

We don't really have accurate numbers . . . employers generally don't fess up to this type of behavior . . . I would guess farming, construction, and house keeping.
