There's really no telling when the 60GB PS3 will be impossible to buy, but I think that by the middle of next year they will be impossible to buy and will be gone for good from most websites and stores.
Sony has already stopped producing the 60GB PS3, and when they all sell out, then their gone.
I think that most retailers and stores will be sold out of the 60GB PS3's by this Christmas. Most stores just sell the 80GB PS3 and 40GB PS3.
Basically, the only place that you will be able to find a 60GB PS3 in the future will be on websites like Ebay or Amazon.

The 60GB system has been discontinued for some time now, but most stores still have them in stock and are trying to get rid of them. I went to Best Buy and when I went there I exchanged my 60GB for a new 80GB. Since the price drop I not only got the better system, but they also gave me $100 store credit because I bought it when it was $600 and now the 80GB is $500.
I believe the 60GB and 80GB cost $500 in stores (so I don't know why anyone would buy the 60GB).
But to answer your question, the 60GB should be off store shelves in the near future, but you can always find them on eBay.

It will never be impossible to buy. There are so many of them
The shops will stop selling it after christmas and the 40gb will be the only one available.
Then in about March the tv tuner will come out and Sony will relelase the 80gb in the UK

Lots of places are already advertising the 40 GB version in their Christmas catalogues. I'd move fast if I were you.

I don't think they are going be " im possible" to buy but it probably get "harder" to buy or find. Get them fast they're saling out fast.
