We love grits here .. sometimes make them the whole meal by adding cheese and bacon or a little spice with red pepper, along with toast. Bake or boil a few potatoes the night before and whip out some hash browns or fried potatoes in the morning? I have a great recipe for a french toast casserole we have sometimes which I will paste below or for a change we have hot eggs .. fried eggs with salsa and cheese on top. I hate to get in a rut too and I bet you will find some new things to try out of all these answers.:)
Baked French Toast Casserole
( think this came from Paula Deen)
1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup
Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly.
Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture.
Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight. The next day, preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping: 1/2 pound (2 sticks) butter 1 cup packed light brown sugar 1 cup chopped pecans 2 tablespoons light corn syrup 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Combine all ingredients in a medium bowl and blend well.

I like to scramble eggs and then put things like brocolli and cheese in them.... we do a variation on the eggs and toast by taking a biscuit cutter (or juice glass) and cutting a hole in the center of the bread, buttering both sides ( and the "hole" and then placing it in a frying pan, add a pat of butter in the hole, drop in a cracked egg...slightly break it (I use the shell of the egg)...and walah! Egg IN toast ( In England this is called Toad in the Hole! Kids LOVE it!
One thing about pancakes that they may hate is the texture...I add shred apple to mine and make my own homemade apple syrup that the kids love as well. If you would like the recipes for these, just email me.

I don't know where you are located but for something different give them Huevos Rancheros. It's easy and not so different they won't like it.
Fried eggs with picante sauce, refried beans, some hot corn or flour tortillas, honey and butter and whatever else sounds good, they'll be begging for more. :) Run a Yahoo search on "Huevos Rancheros" for more ideas on what to include. Enjoy!
