Do they use the props to slow their speed in the air,I have been on a few and it felt like someone applying the brakes on a car but in mid air.

Yes they do.

Putting the propellers into fine pitch is similar (in theory and effect) to downshifting to a lower gear.

It does two things: first it allows the aircraft to slow down if the power is low, second, it allow for quick application of power in case of a go around or missed approach.

Even when an aircraft is coming in to land they typically need quite a lot of power to overcome the drag of high lift devices. So if you close the throttles it's the same effect as applying the same amount of thrust in the opposite direction, that's the drag you are no longer counteracting, so you slow down fast unless you drop the nose to compensate.

I agree with the other guy on fine pitch, but it wasn't a complete answer.

Yes, they change prop pitch, also flaps are used in slowing down.
