20 yrs of bird here

1.clean bird set in your Roaster

2 You will need:
1 stick of butter
3 tsp. poultry seasoning(I use McCormick's).
1 tsp garlic powder
1 tsp onion powder

I like to call this the moisture technique

Take the bird and gently separate the skin from the breast on both sides.
in your hand get 2 tbsp of butter and massage it into the one side do the same with the other
(I know this sounds messy but trust me it works)
Take your 1/2 seasoning, 1/2 your garlic powder and half your onion powder and do the same as you did for the butter

with the half a stick of butter left melt it and drizzle all over bird. add 3 cups water to bottom of pan.

I place mine in a 400 degree oven for 15 min then cut it down to 325, cover. for the remainder. cooking time will vary depending on your size bird. EVERY HALF HOUR BASTE!! till done You have to be consistent with this. check bird temp to check for doneness. check the cooking charts to see how long your turkey should bake for and get a thermometer cook to 175 degrees.

It's pretty simple. Defrost the bird two days before in a sink or plastic bucket full of water. Then clean it out and brine it using a recipe from the link below. Cook till it's done ( use a meat thermometer and let the turkey reach about 170 F. Take it out, cover it with foil and carry over heat will take it the rest of the way. Let it rest for ten minutes before carving.

First thing...Brine the Turkey! easy to do, a lot of people don't do it, makes a big difference.

My brine recipe.
In a Big pot (large enough to submerge the whole bird.

Water
Orange juice (not from concentrate)
kosher salt
sugar
3 to 4 whole garlic
White wine (optional)

Day before.

fill pot about 1/4 of the way with water and boil.
Add OJ and Wine(optional) to fill 1/2 way. add cup and a half salt and about a cup of sugar. Add garlic.

Boil for about 5 minutes. take off heat and cool completely.
Once the brine is completely cool put the turkey in the brine. If there is room left top off with OJ.

put in fridge.

On Turkey day.
2 oranges
2 apples
whole onion
celery
whole garlic

Orange Butter
In sauce pan melt 2 to 3 sticks of butter with some whole garlic and 1/2 cup orange juice. salt and pepper to taste.

Put Turkey in pan, pat dry. Tie the drums together. cover tips of wings with foil. Put inside cavity oranges, apples and Onion cut into quarters. Celery and whole garlic.

Baste with orange butter. Cover with foil and bake according to regular turkey cooking direction. Baste every 30 minutes. for the last 25 minutes remove foil baste one last time and let get a nice golden brown tan.
