The answer is fear. A subtle, normally non-conscious fear of the "Unknown" that subtly exists within all of us. However, for some, particularly those who are very dependent upon their intellects [the Left-Hemisphere of their brains], this fear is a bit more acute than it is for those of us who may actually have access to intuition and even some psychic insight.
The typical scientist, philosopher, attorney, or scholar is what he/she is largely due to "compensation". That is, a psychological term that refers to how one compensates with one thing while repressing another. In the intellectuals case, the Attn Aspect of Apapsyche [consciousness] is fixed in the Left-Hemisphere of the brain in order to prevent it from wandering into the Right-Hemisphere [which is the doorway to the emotional realms hidden within us] and in which lies the great Unknown within us. These people over-emphasize thinking as a means of avoiding experiencing.
For such people to admit to not knowing something, or that anything might exist that their brains cannot know is much too frightening for them to entertain. Much easier for them to simply deny the existence of that which their brains cannot perceive.

ummm... the scientists DO say this... in fact that is one of the biggest problems with religion. It claims to have all the answers, but when put to the test turns up only stories.

Why are you happy with not knowing?
Personally I am happy that some of my money goes into exploration and science.
If we didn't go to the moon, you wouldn't have many of the things you rely on for modern comfort and shelter.
Science and exploration provides insight and invention that is then used to make life better for the human race.
If we all followed your lead, we would never progress.

It is a serious mistake to attempt to tar both religion and science with the same brush. They are adversaries, not allies. I strongly suggest you educate yourself about both.
