i slapped together a pretty good one a couple weeks ago -- hubby loved it.
1 lb ground beef
some chopped onion
1 can diced tomatoes with basil & garlic, drained
couple tablespoons sour cream (i know it sounds weird, but it tastes really good)
1 egg
some bread crumbs
couple good dashes worcestershire sauce.
mix it all up, put in loaf pan. i stuck a couple strips of bacon on top and baked till done. 350 for an hour or so, i think it was.
surprisingly tasty

My Easy Meatloaf Recipe
Ingredients:
1 package Lipton Onion Soup Mix
2 lb Lean Ground Meat
1 Large Egg
2/3 cup Milk
3 TB Catsup
3 TB Brown Sugar
1 TB Yellow Mustard
Directions:
1. Preheat the oven to 350F.
2. Mix the onion soup mix, ground meat, egg and milk together.
3. Form the combination into a well packed loaf shape in a 13 X 9 X 2 loaf pan.
4. Combine the rest of the ingredients and spoon onto the top of the meatloaf.
5. Bake uncovered, for about an hour. When done, take the meatloaf out of the pan and place on a serving plate. Let stand for 10 minutes before slicing.
This is a meatloaf recipe you'll use again and again, enjoy!

*******Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.

If you are going to use beef I 'invented' my own recipe years ago. Take a pound and a half of ground beef in a bowl. By hand mix in two large eggs and a cup and a half of 100% bran flakes. Add a cup of broccoli tops (just the tops) form into the pan as normal. Make a line with your hand in the top. Take some of your hot salsa and fill in the line you made. Top that with crushed saltine crackers. Bake as usual. If you have one of those pans that allows the grease to form below the pan, even better. Take a couple of spatulas and carefully lift the cooked meatloaf out of the pan and put your favorite cheese(s) over the entire top and let melt. While the cheese is melting pour the grease into a small pan add a touch of extra virgin olive oil and on low heat add flour and spices until you have a gravy that is smooth, not lumpy. Then slice meatloaf cover with gravy and serve. A variation is after you have formed half the loaf in the pan is to take progresso vegetable soup, make a line in the half loaf, drain the soup into a bowl and pour the ingredients into the line you made with your hand. Form the rest of the ground beef over the half already in the pan. After cooking mix the grease with the liquid in the bowl. On low heat cook and add flour and spices to the mixture to make a delicious gravy.

Southwestern MeatLoaf
Makes 12 servings
Spicy Sweet meatloaf
Ingredients:
32 oz ground beef
4 eggs
1 1/2 c oatmeal
1 bell pepper
1 1/2 c onion
1 c parsley
1/2 c cilantro
3/4 c ketchup
1/2 c raisin
1/2 c garlic
2 T chili powder
1 T cumin
1 t pepper
1/2 t salt
1 t thyme
1 t oregano
1 t cinnamon
1/2 t cayenne
Directions:
Mince onion, pepper, garlic, parsley, cilantro and raisins (spray knife with cooking spray first - no sticking)
Stir eggs together slightly
Mix spices together in a seperate bowl to distribute evenly
Mix all ingredients together
Bake in a 9x13 pan (or so) at 400 degrees for 60-75 minutes in a standard oven or 45-60 in a convective oven.
Cover with a skim coating of ketchup in last 15 minutes of cooking.
Let stand 10 minutes
Possible substitutions - egg whites instead of whole eggs, Ancho chili powder instead of cayenne, minced apricots or prune instead of raisins, turkey or "GoLean" instead of beef

use Elk meat ground up with sausage and other ingredient more veggies like celery, carrots, potato's, and onions less bread.. add a little garlic, red chili powder and cumin too... bake at 300 for 20 minutes then cover with Mexican Parmesan bake another 10 minutes..lastly before serve it make a sauce like salsa on side...serve with Rice and brocolli mixture good stuff!

I make mine with sliced mushrooms, freash or canned, Cream of mushroom soup and add hot sauce or red pepper flakes. Also I some times use a can of Ro-Tel and mexican blend cheese.
