All I have access to is very sharp mozzorella and parmesean cheese. They make every recipe extremely bitter. What can i do to tame it down a bit.

I put some kind of mustard... Nance's is awesome... cheese, crackers, mustard... very good. the mustard takes the edge off the cheese!!!

Grate it and cook it, or toss on a salad or pasta dish
to take the edge off.

I don't really know if you can...you can try using less of it though. Or just drink lots of wine...that makes everything taste better.

"Sharp Mozzarella"? no such animal.Advise buy it wet at a Deli. "Sharp Parmesan" advise buy "Reggianno Parmesan" Where do you shop??
