Go on Cooking Light.com- they have TONS of appetizers that would be delicious. A veggie tray is also a great start and if there's plenty of time to munch before the meal, maybe some roasted garlic and red pepper hummus? You can roast the garlic and red pepper yourself and mix with Tribe Hummus. Serve with pita. Alternatively, you can make a bean spread with cannelli beans (puree), garlic, a tad of olive oil and fresh chopped parsely and chives. taste while you make to decide on the best flavor. Season with salt and pepper.
If you or your guests are not vegan, they how about baked bree (its a soft mild cheese). You can spread it over apples or a baggette. Caprice salad is yummy, but not really that seasonal. Maybe a spinach salad with grilled (in the pan) red onions, cukes and pommegranite seeds- they look like little rubies! Toss with a maple vinegrette (see cooking light).

I know what they had for dinner. Surprisingly good.
Meatloaf, mashed potatoes, and gravy, and biscuits.
Several different kinds of vegetables. Those green bean casseroles with mushroom soup and pea's and carrots.
My favorite was the chocolate cake. Do you know they even have ice cream made with soy milk?
I thought it was going to be bad I envisioned tofu or goat cheese. that artificial meat taste like the real thing in a meat loaf. For a starter they had this fruit platter, with fresh pineapple and cherrys and apple slices with a artificial sour cream dip. Was good.
She was telling me vegetarians are not all macroni and cheese anymore.

What about deep fried camembert (not sure of spelling!) with cranberry sauce on the side (v. festive)...
or if they eat fish, try a large slice of soda bread, wilted spinach gathered on top, then smoked salmon and a poached egg on top. Serve with mayonaise.... (I love this as a weekend special breakfast)...!

Put out a tray of raw veggies, such as cut cauliflower, broccoli, mushrooms, cucumber strips, carrot strips, celery strips, and radishes as well as artichoke hearts and whatever else sounds good to you. Serve it with a dip of your choice.
