Grab by the tail and dip in boiling water and the hair will just fall out, no need to skin. Cut in half scrape the guts out and lie in bottom of pie dish, you will need at least 7 for a 20cm pie, hope that helps. Tee hee.

Depends on the size of the mouse. You could feed them steroids, they would become twice as big, and you would only need half as many.
Haven't tried them personally, I like rabbits myself.
Skinning them should be easy I think, if not, try blanching them and use a potato peeler.
I would definitely use short crust pastry.

They take too long cuz you need at least a dozen. I'd go for two rats, will save you time.
