Lots of burger-type food can be made with lentils, chick peas, cornmeal, beans, peas etc. If you mash them up and make patties you can make a lot all at once and freeze them, then take them out, heat them up and put them on a bun with mustard, ketchup, mayo, also tomato, lettuce, onion or whatever.
I didn't like eggplant much either until I learned to leave slices in a little salt water overnight. They have a natural bitterness which disappears. If you'd like to get accustomed to certain veggies eat just a bite every day for awhile, fixed in different ways. Your taste buds will adjust and they'll taste better.

before i became vegetarian, i never brought lunches, or ate good food. Now i eat whatever i can find. If yuo ask your parents for a lot of lunch stuff, you don't have to take some of everything. For example, if you have apples, pudding, oranges, salad, nuts in your kitchen you don't have to take it all for lunch. Make sure you have enough variety, but don't eat everything you have. I like to mix it up. Since vegetarians need lots of protein, i eat pb & j sandwiches, a pickle, a juice box and maybe a pudding or something. Try to put as many different kinds of food in your lunches. The more colorful you lunch is, the better. My family buys pre-made salads, so i take that also. I find that if i make my lunch before i go to bed, i won't be in so much of a rush in the morning, and my lunches will be better. If you make your own dinners once in a while, try making a little bit more than you know you will eat. And package it in a container right after. If you look in your fridge, your bound to find SOMETHING. You can probably find some things like crackers, peanut butter, honey, and some kind of vegetable. Be creative, and give yourself time to make your lunch. I have to get excited about making my lunch, in order to get excited about eating it. Carbs are good, but not to many. Focus on protein, and and being healthy, if you eat healthy foods, its almost impossible not to BE healthy. (:

I shouldn't have any recipes but my recommendation to you might be to, have any meal that you just typically eat that has meat in it, meatless. Like Spaghetti or Tacos, which you could substitute the meat with Meatless Crumbles. For a healthy Sandwich, replace canned tuna with chickpeas and use other things you can on the whole put in a tuna salad like chopped pickles, celery etc.. Serve with Pita Bread or Carrot and Celery Sticks. And Vegetarian Chili, which lasts for days! Hope I helped!

Instead of limiting your carbs... exercise more.

Also, head to China Town if possible or other asian markets and you can find stainless food lunch containers. I put my hot lunch in there (rice and veggies, soup, or whatever), lock it up, and wrap it in a towel and that keeps it warm until lunch time. Likewise you can keep cold foods cold with a gel pack and towel too.

That's what I do.

i'm having the same problem):

i've just been bringing either a
low calorie chewy bar
kudos bar
or florida's natural au'some fruit juice nuggets (little chewy fruit snacks)

and just eat a lean cuisine or something right when i come home, but i usually go overboard since i'm so hungry by then.

you can make:

baked tofu (soy sauce and all purpose seasoning on cubed tofu in a slightly oiled pan till crisp) with lettuce, spinach leaves, tomatos, shredded cheese, and zesty italian sauce and package it in glad container or something.
the tofu will be cold by then, so only add it if you like it like that.

pb&j

sliced apple, kiwi, banana, and pineapple with cashews in a container.

ooh and you can bring a plain waterbottle and just pour in one of those on the go crystal light packets for your drink. the pink ones are really good

I pack my daughter's lunch with vegetarian foods everyday - Definitely pb&j, hearty soups in a thermos, whole grain mac & cheese, granola bars, string cheese, yogurt (freeze the night before), fruit cups, cheese quesdilla. It is a challenge, but hang in there, it's worth it!!
