My husband is all for it. My son will be off to college soon and grab a burrito or burger with friend when we get too meat free for him So family isn't a real concern. What tips can you give me for staying healthy?

Do what you want for yourself but you should really consult your family to find out if its what they want.

1. As long as you're eating enough good food on a regular basis, you'll get plenty of protein without any problem.
2. If you don't eat much dairy, take a vegetarian B12 supplement a couple times a week.
3. Enjoy as wide a variety of foods as you can-- try different types of produce, grains or beans. Whole grains are *much* better for you than processed breads & rice. Also, eat a "colorful" diet to ensure a range of nutrients.
4. Keep some ground flaxseed in your freezer & add it to baked goods, cereal, or anything else that works for you. It has a nice, slightly nutty taste & is a good source of fiber & Omega3 oils.
5. Don't let ppl stress you out by saying a veg diet is unhealthy, evil or anything else. Chances are good that some ppl will criticize your new eating choices, especially in the beginning, but most ppl get used to the idea & are fine with it eventually.

1. It is okay to start slow and work your way into it. Make some of your favorite foods but find a way to make them vegetarian. If you love lasagna make it with veggie hamburger or sausage crumbles instead. Vegetarianism is about opening up new food choices but remember you can have all your old favorites too.

2. Protein is not that hard to get. If you eat a well balanced diet you will have zero problems getting the protein you and you husband need. I have been veg for almost 15 years and I am 100% healthy!!

3. Check out some veg cookbooks out of the library. It is a great way to try some recipes without the commitment of buying a book. Vegan Planet is a great starter book that I highly recommend.

4. Give yourself some time to get used to these new foods. Maybe if you don't like soy milk, try rice milk or almond milk instead. Try different brands of veggie burgers to find the ones that you like. Everyone likes something different and getting used to all these new foods is exciting but takes some trial and error.

5. I am not sure if you motivation is ethical, enviromental or health related but learn about all three of these aspects of your new diet. All three all compelling and will make you stick to your guns. I began as a ethical vegan but after I learned about the health and enviromental impact I was even more motivated to never go back to my old diet.

The main thing is just making sure that you are still maintaining a balanced diet and getting the proper nutrition that you/your family needs. One positive aspect of living a vegetarian lifestyle is that you become healthier just because you are paying more attention to what you are putting into your system, as opposed to many people who don't pay very much mind to what they consume on a daily basis.

One thing I would say is if you realize you don't like the faux-meat stuff, don't sweat it. I've wasted a lot of money trying to find one I like, and haven't. :)
