I always find the best recipes on allrecipes.com. A couple of years ago, I came across a stuffed pepper recipe with a lot of good reviews, so I tried it. My roommates asked me to make it a couple times a month after that! I didn't try it specifically because it's vegetarian and none of my roommates are vegetarians, but we all really liked it. It's warm and filling. It takes a little while just because you have to roast the peppers, but it's not difficult to put together. I even made it for a party one time, but they didn't last long.

I would suggest looking into some Portabella recipes. One I did before was I brushed the mushroom cap with olive oil and sprinkled with Monterrey steak seasonings. It was the first time I've ever cooked this type of mushroom and it tasted just like meat with good flavoring.
A better thing to do would be just to ask them what they prefer. If it's something that you can't prepare yourself check with your local restaurants and see if you can find a vegan meal there and purchase it. When you plate it she won't know if you bought it or cooked. I hope this helps.

Why not just make a vegetarian meal for everyone? A really super veggie dinner that everyone loves (I serve it to meat eaters all the time):
Cooked penne pasta with pesto sauce, steamed asparagus and red peppers, toasted pecans, and crumbled bleu cheese. It's fabulous and ALL your friends will be happy.

How about a vegitarian Pizza cut into finger food size. And everyone loves Veggie trays. Do you have a theme for your party..If you are doing Mexican you could have a vegitarian dish flavored with that nacho flavoring, Italian could be something pasta, talk with her see what things she eats and copy some of them.

If you did a stir-fry, you could remove the vegans veggies before being contaminated with the meat (brown the meat separately)
Stir-fried veggies over rice with soy. Can't complain much.

Fruit and vegetables.
Have a fruit tray and vegetable tray and do a pasta dish as an entree.

You could make vegetarian baked ziti with vegetables in it instead of sausage. Or, you can make rigatoni alla vodka and a nice salad.
