Chicken parmigiana

INGREDIENTS
4 chicken breast fillets
1 egg
½ cup milk
2/3 cup flour, approx
1 cup dried bread crumbs
1 tablespoon olive oil
1 tablespoon butter
1 cup passata or sugo (Italian tomato sauce)
1/2 cup Australian parmesan, grated
1/2 cup Australian mozzarella, grated
METHOD
Slice chicken breast in half horizontally; using a meat mallet, bash out gently.
Lightly beat eggs with milk and flour in a large bowl. Dip chicken into egg mixture; drain and coat in bread crumbs.
Heat oil and butter in large frying pan. Cook crumbed chicken until golden brown on both sides.
Spread passata on chicken, sprinkle with both cheeses and grill until cheese has melted.

What you need…
9 Cloves of Garlic Peeled
1 Stick of Celery
1 Carrot
1 Onion
2 Tbsp of Olive Oil
1 Tbsp of freshly ground black pepper
1 Small dried Chilli finely chopped
1lb 2oz of Stewing Steak
4oz Of Pork Belly
2 Tbsp of plain flour
2 x 250g Tins of Tomatoes
2 Small sprigs of Fresh Rosemary (dried would probably do though)
7 Fl oz of Chianti
1 Tbsp of Tomato Puree
What You Do…
Finely chop one of the cloves of Garlic and the Onion, Celery and the Carrot. Pour the oil into a large flameproof Casserole. Add the vegetables and the chilli and fry until soft together with a little salt and half the black pepper for about 10 minutes.
Cut the beef and pork into bite sized pieces and toss lightly in the flour. Add the meat to the pan and fry with the vegetables for about 5 mins. Stir in the Tomatoes, 7 whole garlic cloves and the Rosemary and cook for a further 10 minutes.
Pour in the wine and let it bubble over a high heat until it has evaporated. Add the tomato puree and enough water to just cover the meat. Then lower the heat and cook for about 3 hours either on the stove or in the oven. If cooking in the oven have it on 160 degrees or gas mark 3 or if a fan oven 140 degrees. Check from time to time to make sure it hasn’t dried out and if necessary add a little boiling water. Don’t be tempted to turn the heat up as this dish needs to cook at a bare whisper.
When the dish is ready you should have a lovely thick sauce and fork tender meat. Season with salt and the remaining pepper and serve.

I have some cooked beetroot and boiled potatoes in the fridge. It will therefore be something "invented". Such as:
Chop up the beetroot into fairly generous chucks and chop some onion finely(ish). Saute the onion in a non-stick pan, add beetroot and put lid on. Leave on a low light to sweat and heat through.
In the meantime, put the potatoes through a ricer (or just mash them) add a couple of spoons flour sifted with a pinch of salt, a good few turns of pepper mill and a teaspoon baking powder. You can add chopped fresh herbs to taste, but I like to add grated nutmeg (or mace) at this time of year. Mix into a stiff dough, either with milk or an egg. Just add more flour if too sticky. Knead lightly.
Roll out on a floured surface and cut into rounds, squares or triangles just a little under 1 cm thick. Put them on a medium-hot greased griddle or thick bottomed pan and cook both sides until golden.
Whilst the potato cakes are cooking, I will either make a white sauce or a cheese sauce to pour over the beetroot, or I will just add a couple of spoons of jogurt or creme fraiche to the pan. It may need some seasoning to taste... Perhaps ground caraway or a little spice such as chilli or allspice.
Serve the potato cakes on a plate with the beetroot mix spooned over. If it looks a little short on quantity for my Man, I will grate some extra cheese over the top and put under the grill to brown. Served with a green salad or maybe just fruit for pudding. We shall see!!!
I was also into dumpling mode last week... It took me several days to source some bacon bones to make a pea and ham soup. But it was worth it! A belly warming winter dish which everyone loves, even if they hate the thought of how many calories it contains! LOL!

Pasta bake with bacon and leeks.
Boil penn pasta or whatever happens to be in the cupboard, except spaghetti.
Fry 1 pack of bacon with 2 cloves of garlic. Add leeks, turn down heat, cover and leave until leeks have gone soft.
Add 2 tablespoons plain flour, mix well and add milk until you have a thick coating sauce sauce.
Now add 3oz strong cheddar, a teaspoon of mustard( English, Dijon, German etc.). Season well with salt and pepper.
Fold into cooked pasta adding plenty of grated cheese on the top and bake for approx 20 - 25 mins at gas 6/200c.
Serve with some broccoli or salad.
A French stick cut up would go well to mop up juices.
Tasty and cheap.

Saur Kraut oven dish-
amounts vary depending on number of helpings -
1) boil & mash potatoes to your liking
2) bake ground meat until edible
3) put the ground meat in an even layer in a greased oven dish
4) Evenly spread saurkraut (right from the package) over the meat
(sprinkle some raisins if you like)
5) Evenly spread mashed potatoes
6) Add a thin layer of crumbed toast for a nice crust
7) Put in a pre-heated oven (180-200 celcius) for about 20 minutes or until the 'crust' is a nice golden brown.
8) Enjoy ;)

Chicken Pot pie, homemade. Boil chicken with skins in water until cooked. Take out of water and let cool. Take off skins and debone chicken, throw the chicken bones and skins to the stray cats, Put chicken back into the broth and let simmer. Add frozen veggies of your choice, traditional ones are the mixed ones. Let simmer until veggies are tender. Add an undiluted can of cream of celery soup and one of cream of chicken, to thicken. Add salt to taste. Make or use a ready-made pie shell and line a baking dish. Add chicken & veggies leaving about 1/4 inch at top. Add another pie crust if you want double crusted pot pie and put a criss-cross slit in the top crust for vent. Place on a foil lined baking sheet and bake at 350F degrees for about 1/2 hour. (The baking sheet will catch any spill overs and save a clean-up nightmare in your oven!) You can use left over beef, pork, venison, duck, whatever, as the meat in this. For the thickener with the other meats, use cream of mushroom and the juice from precooking the veggies. If to thick, add a little milk to thin before putting in oven.

Salmon Fillets with Almond Crumb Crust
3 tbsp ground nuts
2 tbsp finely chopped fresh parsley
1 tsp dried Italian seasoning
1/8 tsp pepper
1 egg white
1 1/2 lb salmon filets cut in 6 pieces
1/4 lb butter in saucepan
Dredge fish in egg white, then into combined ground nuts, parsley, and seasonings. Cook just until golden. Maybe 7 minutes,turning once.
Serve over a salad...

Hash Brown Casserole Au Gratin
2 cans potato soup
1 C. sour cream
1 ( 2 lbs) bag of frozen hash browns
2 C. shredded cheddar cheese
Combine the soups and sour cream... add some pepper and garlic powder
Add potatoes and cheese... mix well
Pour into lightly buttered 13 x 9 pan. Bake uncovered for 1 hour.

Salmon Parcels with Dill Cream Sauce.
wrap salmon fillets in greaseproof paper or foil with a dot of butter, salt and pepper. You can add very thinly sliced carrots, shallots and celery too.
Put in oven (170) for around 20 mins.
soften some shallots or onions in butter then add the double and chopped dill. Serve with new potatoes.
