Their flavor profile is beefy, meaning they have a very rich strong flavor. Very earthy, try slicing the caps, saute with fresh garlic, thyme, and deglaze with balsalmic vinegar. Add this to a round of focaccia sliced in half horizontally. Layer these ingreds:
Grilled sliced chicken breast, julienne of roasted red pepper, fresh arugula, carmelized onions, and fresh mozzarella. Smear one side of bread with olive tapenade, and the other with basil mayo. Put the pieces together to form a sandwich. Grill, a few mins on each side or until you get nice grill marks w/o burning your bread. Remove from grill and place in oven for about 5 mins at 400F to heat through. What you have is a really good chicken portabello panini. Its a crowd pleaser. I make this when I have friends over.

Portobello mushrooms are actually the same species as the small mushrooms you buy at the market, grown very large. They taste similar - but cook into larger pieces. Try replacing a burger with a grilled portobello, put it on a bun, add the usual toppings, and enjoy! Or, cut into cubes, and alternate with cherry tomatoes, marinaded lamb cubes, and green pepper strips on sticks for kabobs.

1) Portobellos ARE average mushrooms. They are the same species of shroom as the white button mushrooms, the Italian brown mushrooms and Crimini mushrooms. They are just bigger. The button mushrooms are the baby version of portobellos. (scientific name: Agaricus Bisporus). They have a bit more "earthy" flavor than the smaller ones. 2) Cook them anyway you want to. I chop 'em up and saute them.

They are so good! If you brush both sides with oil, put it on the bbq grill.till done (both sides) Then use it as you would beef for a burger! Don't forget the cheese and a pickle! You'll be hooked! VERY HEALTHY!
