im looking for a good mac recipe!

1 c. macaroni
1 qt. hot water
Few drops of oil
1/2 tsp. salt
8 oz. Cheddar cheese (1 3/4 c., cubed)
1/4 c. onion, chopped
1 tbsp. butter
2 eggs
1 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1/2 tsp. Worcestershire sauce
3 tsp. flour

Cook the macaroni in boiling water for 7 to 8 minutes. A few drops of oil makes it not stick together. Drain and run cold water over to remove excess starch. Drain well.
Beat eggs slightly and add Worcestershire sauce, a little paprika. Layer the cooked macaroni in a 2 quart baking dish, starting with the macaroni, cheese cubes, add onions, salt, pepper, paprika, dots of butter and 1 teaspoon flour to each layer, ending with cheese all over the top layer. Pour the egg mixture over macaroni and cheese, making sure flour is dissolved on the top. Sprinkle little bread crumbs over the top for variation and bake at 350 degrees for 1 hour.

When I was living in New York Mac and Cheese suddenly became an in thing at all of these fine dining restaurants. It is such a simple American staple, but it can made to be really unique and delicious because you have SOOO many varieties of cheeses that you can use.

The combinations are endless

I would go to a store that offers a lot of artisinal cheeses, like Whole Foods, and just ask the people in the cheese section. They are usually very knowledgeable and can help you with a blend of cheeses based on your tastes. You might like something milder or something more sharp. But they'll love helping you, as most people that are really into cheeses are nutty about it!!!

Think of this as having as many variations as fondue! Fondue was actually a peasant dish in Switzerland, cheeses were/is just their thing. Now people think that it's exotic and fancy. So you can make your regular mac n' cheese with the same idea in mind. Be creative and have fun with this one!

Well, use real cheeses instead of powder & several types:
Cheddar, Mozzarella, Asiago, Parmesan, Romano, etc.
I like to add some colour & flavour too; saute:
Chopped Red & Green Sweet Peppers, Onions, etc.
CHEESE SAUCE:
Melt 1-2 tbsp butter in saucepan over medium heat.
Add 2-3 tbsp flour to make a golden roux,
Add 1-2 cups of milk, stirring until edges start to bubble.
Reduce heat, gradually add cheeses, stirring until melted.
When thickened, pour over 2-4 cups cooked macaroni.
Bake in a casserole dish at 350-400F until top is golden.

Velveeta as the base for the sauce then I mix and match with whatever cheese I have on hand to add a different flavor. My favs are colby jack and sharp cheddar. If I'm really creative, I'd add crumbled bacon and chives on top, maybe some fried onions too.

Made some the other day. I put a can of canned pink salmon in it. For cheese, I also mixed in ricotta and cream cheese. Also, a bit of dill, to go with the salmon. And topped it with a lot of cheddar cheese. 350 degree (F) oven about half an hour til golden brown. Yum!

Bacon bits or broccoli
Instant Mash potatoes and a lil touch of Ranch.
Tuna and peas.
Chicken (from the can)
Mozzeralla or cheddar cheese.
Fiesta cheese (its from walmart).
Cheddar cheese soup

These are different recipes.

I like to cook my mac n' cheese, put bread crumbs on top, then back it at 350 for about 10 minutes. Its SO good!

after making it and everything,
here are some variations you could try
(they just might be a little crazy for you though)

-add some spam
-for the matter, almost any kind of meat works
-ketchup works great with mac and cheese
-bacon is amazing with it

Well this isnt a recipe but I always use milk instead of water and i add a lot of butter and i use parmesan and REAL cheeses

i luv mac and cheese
um if ur current recipe tells u to add water, add milk or creme or half and half

when ur all done (assuming that u used cheddar cheese) add more cheese

like mix in chuncks of muenster and mozzerella or watever in and then reheat and mix

i have no idea... but thats how i like it...its all up to u
