Thank you for reminding me of this wonderfull dish, I havent had it for years but I will now.
My mom made this alot when I was growing up and taught me to make it.
2 cups milk
we always used heavy cream)and the broth from the oysters to make 2 cups.
2 cans oysters.
2 cups crushed saltines
2 tbs butter
salt and pepper to taste.
butter the baking dish,sprinkle half the cracker crumbs on the butter, lay down your oysters and then finish off with the rest of the crackers,pour your liquid on top and dot with butter
bake at 350 for 35 min.
another way she made it was pour a can of creamed corn on the bottom on the baking dish arange your oysters on the corn sprinkle with salt and pepper, grate some onion on top then put 2 cups crushed saltines on top of all and then pour your liquid on top.
both of these are yummy .
dont forget to allow to set a while before baking so the crackers can soak up the liquid.

Oh hey I had to come back and tell you that you maybe couldnt find anything on it cause you were calling it dressing. and we always caled it oyster cassarole or oyster bake.
look it up this way ,I did ,and found a truck load of info on it.

OYSTER DRESSING
Cornbread:
1 cup self rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil
Dressing:
7 slices white bread, dried in warm oven
Cornbread
1 sleeve saltine crackers
2 cups chopped celery
1 large onion, chopped
8 tablespoons butter
7 cups chicken stock
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried sage
1 tablespoon poultry seasoning
5 eggs, beaten
2 pints or 1 quart oysters, drained
Preheat oven to 350 degrees F.
To make the cornbread, combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
To make the dressing, crumble dried white bread slices, cornbread and crackers. Mix together and set aside. Saute chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage, and poultry seasoning. Add beaten eggs and mix well. Add oysters and mix. Pour into a greased pan. Bake for about 45 minutes.

It's basically the same as a regular dressing except you add oysters in with it. My mom makes it every Thanksgiving. She uses the oysters out of a can because it's easier than trying to clean really fresh ones.
