If you download a game from the Playstation Store, you can view the manual by pressing the PS button while you have the game up and running on the PS3.
After you press the PS button, go down to Software Manual and you will be able to scroll through all of the pages of the manual for the game on screen. I've done this with 2 of the games that I have downloaded from the Playstation Network such as Medievil and Crash Bandicoot.
