Fresh carrots are best if eaten with the skin on - don't peel them. The knife is okay but could be better if you wash them and scrub lightly. Eat them raw, cook them but leave the skin on....

yeah go for it, altough after getting the dirt off i would just rinse them for the best crisp taste.
