Saludar comes from the same latin source as the english word "salute." It means to greet or to say hello.

Saludos therefore would be greetings. It is common for spanish speakers to use the verb mandar (to send) and say "mande mis saludos." Literally that would mean "send my greetings" but can be more loosely translated as "say hi for me."

Also, when drinking with another person or a group, it is a very common practice to lift and touch your glasses together and then say "salute!" just before drinking.
