Fresh Strawberry Pie

shortbread cookie pie crust
8 oz cream cheese, softened
1/2 cup sugar
1/2 tsp. almond extract (can used vanilla instead)
1 cup heavy cream
Strawberries, washed, caps removed

Beat cream cheese, sugar and extract until smooth. In a chilled bowl, whip cream until stiff peaks form - fold into cream cheese mixture.

Put into cookie crust. Top with whole strawberries, point end facing up, starting in the middle and working out to edges, covering the cream cheese layer. Refrigerate for up to 3 hours before serving. Serves 8.

Ingredients:

2 cups Fiber One cereal
8 tsp. LAND O LAKES Light Butter , melted
6 oz. Jell-O Sugar Free Gelatin mix , strawberry flavor
1 1/2 cups Cool Whip Free

Directions:

Begin by preheating oven to 350 degrees.

In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Combine crumbs with melted butter and stir until well mixed.

In an oven-safe pie dish sprayed with nonstick spray, evenly distribute Fiber One mixture, using your hands or a flat utensil to press & form the crust. Use your fingers to press it into the edges and up along the sides of the dish.

Bake pie crust for 10 minutes. Set aside.

In a separate dish, dissolve gelatin mix into 2 cups boiling water. Stir for 2 minutes, or until completely dissolved. Stir in 1 cup of cold water, and place in fridge for about 1 1/2 hours, but NO LONGER (Jell-O should be jiggly, but not firm).

Next, use a mixer to fold in Cool Whip. Once mixture is very well blended, pour evenly into pie crust. Use a flat utensil to smooth out surface.

Refrigerate for several hours until firm. If desired, garnish pie with sliced strawberries.

This is the absolutely best strawberry pie ever. I served this in my restaurant during our strawberry season and made a ton of them-this is scaled down for one pie. Very simple to put together and you will get raves!
Strawberry Pie
¾ cup sugar
4 Tablespoons flour
1/4 cup of strawberry jello (½ of a 3oz. box)
¾ cup water
16 oz pkg. fresh strawberries
Graham Cracker pie shell
Mix sugar, flour, and jello in a small saucepan. Add water. Bring to a boil over medium-high heat, stirring occasionally. Continue cooking, stirring constantly until it starts to get thick, about another minute. Set aside to cool slightly. Slice strawberries in half lengthwise. Lay half of strawberries in graham cracker pie shell. (I bake my own using directions on graham cracker crumbs package, plus I add a little cinnamon and nutmeg, which makes it taste yummy))Pour filling over strawberries and then add another layer of strawberries. Cover and refrigerate 6 hours. Top with whipped topping.
