It's the uvula. It's there to stop large items going into the throat and choking us. It works, most of the time.

Are you talking about the hyoid bone (Adam's apple)? It is actually a bone, but it is the only one that doesn't articulate (isn't attached to) another bone in the body.

The other thing that comes to mind is the uvula. It's the little thing that hangs down from your throat towards the back of your tongue.
