CONFETTI RICE
1 cup rice
1-1/3 cups water or broth
1 tsp. salt
1 tsp. garlic powder
1 cup carrots, very thin 2 inch long strips
1/2 cup chopped red onion
1 cup cut zucchini, 1/4 inch squares
1/2 cup frozen corn kernels
1/2 cup diced red bell pepper
1/2 cup frozen peas
2 Tbsp. chopped parsley
1 Tbsp thyme or marjoram
Place rice, water, salt and garlic powder in a pot with a tight fitting lid. Bring to a boil, then lower heat to simmer. After 10 minutes, add carrots and onion. Steam another 5 minutes, then add remaining vegetables. Remove from heat, leaving lid on another 5 minutes. Fluff rice and distribute vegetables throughout rice. Sprinkle with herbs and serve.

Benihana Fried Rice
Makes 4 servings
2 tsp chopped onion
2 tsp chopped carrots
2 tsp chopped green onion
2 cups cold steamed rice
1 tsp. salt (optional)
9 Tbsp. butter
4 eggs
2 tsp oil
4 oz diced cooked chicken
1 tsp sesame seeds
1 tsp.pepper
4 tsp. soy sauce
Scramble eggs and chop after cooking. Sauté chopped onion, green onion and carrots until done and mix with chopped scrambled egg and chicken. Break off chunks of steamed rice and mix with vegetable, egg and chicken. Add sesame seed and salt and pepper, stirring well. Add butter and soy sauce into the mixture, stirring well until done.

This was my Mother-In-Law's recipe for brown rice. It's very simple and always popular.
1 stick margarine, cut in small pieces
1 cup rice (I always use parboiled, such as Uncle Ben's)
2 cans beef consomme'
1 large onion, quartered and sliced
2 cans mushrooms
Place the above, in order, in an 8x12 or similar Pyrex dish. Cover with foil; bake at 400 for 1 hour.
Personally, I must add a generous sprinkling of garllic powder. That would go well just after the rice.

Rice Pilaf
1 Tablespoon butter
1/2 cup diced onions
1 cup rice
2 cups chicken or beef broth
Melt butter in saucepan over medium heat. Saute onions for a minute or two, then add rice and stir around occasionally for another two minutes. Add the broth (it will immediately start boiling). Stir to mix, reduce heat to low, cover tightly with a lid. Do not uncover for 15 minutes. Uncover. Serve. Rice will be fluffy. Each grain seperate. Perfect. You can also add diced carrots or sliced mushrooms if you like, to the onions, just add a bit more butter.
