there is a brown powder, what is it? Chocolate powder? cinnamon? or what?

It probably is unsweetened baking cocoa powder sifted over the meringues. But I don't like the bitter taste on top of my sweet meringues, so I substitute Nestle's Quick chocolate milk powder. It works well and tastes much better!

It's cocoa powder. The best way to do this is to put cocoa powder mixed with a tiny bit of cornstarch into a shaker(an empty salt shaker or spice shaker will work) then gently shake it on a little at a time. The cornstarch will help it stay put.
