My alternatives are Earth Balance margarine (truly wonderful stuff) and Silk Soy Milk. You can use rice milk too... Try finding vegan recipes and adding meat. I also tend to eat more meat and chicken and eggs rather than dairy. I find it pretty easy anymore to eat dairy free in the home, and I take lactose pills when going out....
Oftentimes non-dairy specialized products that are copies of foods normally full of dairy, can be found at health food stores too.
Anywho, specific suggestions...
Pot pies, just use soy milk instead, anything with a cream base, you use a reduced amount of soymilk 'cause it doesn't thicken like regular milk
Pasta with marinara instead of a cream sauce
Steaks, meats, chicken, turkey, cornish game hens, eggs, all no dairy, hooray!
Soups without dairy (basically, non-cream)
Salads
Anything with the earth balance margarine, breads, bagels, english muffins, bread products, whatever....
I would suggest having him help you research since he's the one who will suffer if you don't cook dairy free. He needs to learn it anyway, in case he goes out to lunch/dinner/breakfast...

There is no such thing as lactose and tolerant. What you mean is Lactose Intolerant, Which means your body can't digest the lactose aka milke sugar in your GI tract. If you are lactose intolerant you would have gas pains and bloating after eating dairy products. It can also cause diarrhea. It can cause a lot of stomach and intestional pain. I became lactose intolerent ten years ago and I am 56 years old. I use a milk called Lactaid, at most grocery stores. There are also pills you can buy at the store that help you digest milk sugar. I take one when I eat ice cream or anything dairy.

When I had to adjust my cooking because of my husband's health issues, I looked at my choices as difficult because I saw what I couldn't fix anymore. Later when I had to change my cooking again because he went from low-fat/low-cholesterol to low-carb, I decided to have a mind change and saw it as a challenge. There were soooo many things I could fix him at each diet change that it surprised me how many things were out there that I could prepare.
You could say - no milk, no cheese, etc. or substitute them with soy products or other non-dairy products. Or, for instance, you could go from white clam chowder to red. Red sauce - like spaghetti or marinara - instead of cream sauce.
My husband is also lactose intolerant but he can eat cheese. Something about the processing of the cheese that he doesn't have a problem with. Same with tuna packed in water - which contains casein - a bi-product of milk. He can eat the tuna with no bloating and gas.
So, you might find what your hubby can eat without having a reaction and use those products. If he can tolerate cheese, then you can see how much more your world opens up.

Just cook using plain soy milk or coconut milk. They are both great alternatives to regular milk and cook pretty much the same as long as it isn't pudding or another cream type recipe that is dependant on the fat content of milk. I have myself and one other in my house that are lactose intolerant.
