is there anything that you CAN substitute for shortening if not butter? oil?

In general yes.

I make pie crusts with both shortening (for flaky crust) or butter (buttery flavor). I actually prefer shortening for savory pie crusts whereas I like butter for tarts and sweet crusts.
There are instances where you would not want to substitute shortening for butter. This would include cookies and cakes (despite the fact that packaged brownies use vegetable oil). I like the butter flavor in my cookies. I would also not try to make puff pastry with shortening because i don't think it would be very tasty.

However, chemically it will work because it's all fat. So, it comes down to flavor

Yes, it works but you will have a different product.

I use a combination of shortening (for texture and longer shelf life) and butter (for more flavor) for chocolate chip cookies. After several attempts using different recipes, I do the same with the peanut butter cookies, initially mostly because then the peanut butter cookies are crisper and that's how I like it.

For example:
For choc chips 1/4 c shortening and 1/2 cup butter
For peanut butter 1/4 c shortening and 1/4 cup butter

No. Butter is the preferred ingredient in cookies. Baking powder and baking soda are two different things.. they are not substitutes for each other.

Yes, substitute butter, or some of the higher fat margarines. You don't want to use "spreads" like country crock though. It has to have a fat content.
Not Oil............ it won't cream if it's oil.

Is dependent on the context really. Which is better as a snack - fresh fruit to me. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to lower back on sugar and lose weight vegetables
