I can't have gluten, so I bought gluten free corn muffin mix at the market
the ingredients are:
corn meal
white rice flour
bakeing powdwe
and salt

it says to add 1/4 c. sugar, 1 1/3 c. lowfat buttermilk, 1 egg, and 6 tablespoons melted butter

I would like to lighten up this recipie, I have some pumpkin puree, I can make apple sauce quick, we have all kinds of oil, and i have sucant to use in the place of butter.
I was thinking 1/4 c. sucant
1 cup pumpkin puree
spices
1/3 or 1/4 cup fat free milk
2 egg whites
3 tablespoons canola oil

what do you think??

sucant is an all natural sugar that's unrefined
and i always forget how to spell it!

I actually just made these muffins yesterday (the mix is from whole foods, right?). Instead of sugar I used 10 splenda packets. I replaced the buttermilk with 1 can of evaporated skim. I can't have eggs so I replaced the egg with egg replacer (2 egg whites would probably work just as well though). Finally, I replaced the butter with a combination of unsweetened applesauce (1 individual snack-sized cup) and 1 tablespoon of canola oil. They came out pretty tasty. Hope this helps!

use soymilk, dairy is crap
no need for eggs, they are crap, too

canola oil is refined from the rape seed which has to be highly refined to remove toxins to make it safe for human use and is crap

buttermilk doesnt have butter in it at all ,its is more natural to use the buttermilk and less fatening then other things. see the link below for proof of what it is

RECIPE and baking powder are the words.

What is sucant?? I haven't heard of it.

Your reduction sounds good. I also use Splenda in place of sugar, it really does a great job.
