Becuase they're made with ice cream. Ice cream is made by incorporating air into it. Most ice creams are about 50% air per scoop. So you have that much air in a cup, then let it sit, the air, or "foam" will rise to the top.

When you make a milkshake, blending it dissolves air in it. The colder a liquid is, the more air it can hold. When it warms up, the dissolved air is forced out of it. As it rises to the top, it produces that foam.

I don't know..probably because it's melting, and all the sugar and milk foam up...but you really shouldn't drink milkshakes, especially from fast food restaurants...they have about as much calories as a double cheeseburger...they are no bueno..no bueno at all...make your own at home!!!!

You are talking about the ones that are made with ice cream that has no cream in the (cream) part. Shakes like at McD's and Burger K are not made with real ice cream. So the artificial ingredients separate and it tastes yuckier by the minute.

When something(liquid) is whipped at a high speed air is introduced into the mixture. When left to sit the gases rise to the surface because (hell) thats what gases do.

Its probably because when they are blended air is incorporated into them, so once they sit the air bubbles start to come to the top similar to carbonation in a soda.
