This is a vegan recipe, but you could just used regular sour cream and butter in place of the Tofutti and margarine-- and just double the recipe depending on the number of guests. I LOVE brown sugar (and nuts) with my sweet potatoes... i HIGHLY recommend it. :) Good luck!
Whipped Sweet Potatoes
4 sweet potatoes, peeled and diced
1 cup nondairy sour cream (try Tofutti brand at Tofutti.com)
2-3 Tbsp. margarine
1 tsp. salt (optional)
Freshly ground black pepper, to taste (optional)
4 Tbsp. pecans, almonds, or walnuts, chopped (optional)
2 Tbsp. brown sugar (optional)
• Fill a medium pot with water and bring to a boil. Add the potatoes. Cover, reduce heat, and simmer for 10 to 15 minutes or until the potatoes are tender. Drain.
• Pour the potatoes into a bowl, and beat them with an electric mixer on low speed.
• Add the nondairy sour cream and margarine and whip until fluffy.
• For a savory version, mix in the salt and pepper. For a sweet version, sprinkle potatoes with the nuts and brown sugar just before serving.
Makes 4-6 servings

Bake the sweet potatoes just like regular white potatoes and then peel and use in any recipe that calls for canned. if you want something not sweetened try roasted sweet potatoes they are fabulous. Peel the raw sweet potatoes, cut into chunks or slices. Toss with a small amount (about 1 tsp oil per pound of sweet potatoes) of olive or canola oil and some salt and pepper. Spread in a single layer in baking dish and bake at 450 degrees about 45 minutes. They come out fantastic!! You can also make this recipe with a combination of white and sweet potatoes. Makes a great side dish for almost anything and very nutritious.

Sweet potato fries are out of reach with canned sweet potatoes. However, you can make some really good mashed sweet potatoes. Heat them in a pan with a little milk, mash with melted butter.

Peel the sweet potatoes, Cut them up, wash them
To a sauce pan add the potatoes, 1/2 cup of water, a cup of sugar, 1tsp nutmeg, a stick of butter, and 1 tsp vanilla
Cook covered for 5 min. med. heat
Uncover, continue cooking til potatoes are tender and juice is thick(candy-like)
Let stand 10 min. Serve

simmer them until you can stick a fork in to them (medium low heat) and then do whatever your recipe calls for
