this happened with both apple butter and pumpkin butter. in both cases i processed in boiling water for 10 min. the only culprit i can think of is that the pot i am using is not really deep enough, so maybe not enough boiling water is above the lid level? can i process them upside down? or do i just need to buy a bigger pot

Sounds like the pot just isn't deep enough. You need to at least an inch of water above the lids. Also, make sure that you cover the jars with a thick towel (i usually used a big towel, folded in half) so that they cool very slowly, thus creating a strong seal. Be sure not to disturb them if you can help it. :)
I had a problem with a batch of pickles-- the lids were old and didn't seal correctly. So also be sure that the lids haven't been heated previously and are in good shape.

It does need to cover the lids an inch or more to be effective. At this juncture, I am not sure I would try to reseal them...Sorry, but because they unsealed after a few days, I am suspecting that they never truly had a good seal to begin with and they have been sitting out.
You can make apple butter and pumpkin butter and freeze them instead! :)

While my dill pickles were in the hot water bath, one of the lids popped upwards (yes, while boiling). What would cause that to happen?
