I'm pretty new to archery and I was just wondering if it's okay to leave my bow strung up or if it would be better to unstring the bow whenever I'm not using it?

I have a recurve bow, 60" about 35lbs pull weight.

If you are not going to use the bow for more than a few days, unstring it. If you leave it strung, it could develop what is known as "string follow" - when the bow takes on an appearance of being strung and does not return to the "unstrung position" when the string is removed. This is especially true of bows made only of wood. If you leave your bow strung for too long a time without using it (and this amount of time is different for each bow), even a thoroughly modern recurve, it will be robbed of its efficiency and power.

Besides, by unstringing your bow each time you are done with it for the day, you are strengthening those muscles used to string/unstring it and (hopefully) getting better at doing it each time.

The ONLY type of modern-style bow which can be strored for lengthy periods of time is the compound bow - since you need some rather specialized equipment to do it and the materials used (and the bow itself) are designed to withstand the stresses.

And NEVER hang your bow by the string on a single peg for any period of time more than a few hours (and this, only if you have to), unless you want to risk breaking your bow. The stress placed on the string by hanging a strung-up bow on a nail or peg can weaken it the string, causing it to break - and broken strings most always result in broken bows. Storing an unstrung bow in a corner is just as bad; the bow can become warped; a warped bow is not only useless, it is dangerous.

Lay the bow "flat" (unstrung), either on pegs or on a horizontal surface such as a shelf (the shelf supports are good) or table (or even the floor, if you have room) - never hang it by the string. Last, remember the advice for nearly everything else...

Store in a cool, dry (but not so dry that leather becomes petrified) place. Heat is a bow's enemy, as is dampness (and so-arid-your-nose-bleeds lack of humidity).

If You Have A Compound It Is Fine To Be Strung Up But If You Have A Recurve Or Long Bow It Is Highly Suggested To Be unstrung

I was in archery for several years. The best thing to do is unstring the bow if it's going to be unused for long periods of time so the both the string and the bow retain their resilience and does not become too weak too quickly. If it's just overnight or so, that's ok to leave it strung, but for more than that, unstring it. Any more questions, let me know.
