Roasting times may vary greatly depending on a number of variables that affect the cooking time such as the shape of the turkey, the proportion of meat to bone, the variations in different ovens, the altitude, and if the turkey is fresh or frozen and then thawed.
Listed below are roasting times that can be used as a general guideline, but the only true gauge for determining proper doneness is with a meat thermometer. The breast must reach an internal temperature of 170° F and the thigh must reach 180° F.

Note: Using a convection oven will cut as much as 25% off the cooking times.

Over night roasting is not a good idea, Cooking at low temp is also not a good idea. A rule of thumb to follow is 15 mins. per pound at medium heat (350*-375*). Check with a meat thermometer after 41/2 hours. Internal temp should be at least 170*.

I have the job of cooking the turkey for our family get together and usually have one that large.
I rinse it off and pat dry. Spray with butter flavor pam and salt and pepper.
Put in large roaster and add a cup of water. Then I cover it tightly with foil and bake overnight at 300. Putting it in the oven around 11 before going to bed. I usually take it out around 9 the next morning and then make the dressing in another pan. Bake that and then head to moms. This won't be a picture perfect carving turkey, it will be falling apart. We debone it and serve the white meat on one platter and the dark on another.
Drain the broth off and thicken with cornstarch for the best gravy.
Make sure you have a deep roaster or it will run broth all over the place. And that is a big mess to clean up....I know.

about 6-7 hours you have to open it once in a while to check if it's okay and you get gravy out of it too.
how to make the gravy
First, you have to have cooking oil from the meat you fried, i.e., chicken, pork chops, etc. Use a small amount of the used oil, put it in a skillet and let it get hot. Add a small amount of flour and stir until it browns. After it browns, add water until you reach the thickness you want. It doesn't take much flour -- maybe a few tablespoons.
