In the bible it says 'Joseph, son of Israel' but then it refers to Joseph's father as Jacob. Which name should I use, and why?

Jacob IS his father. It was later changed to Israel.

Jacob was the father of Joseph. During one moment in his life though, God also called him Israel. Both names are acceptable.

God' changed Jacob's name to Israel. You should refer to Him as Jacob before his name was changed and Israel after his name was changed.

Israel is another name for Jacob.

They are the same person, Jacob is his name given to him by man. Israel is his name given to him by God.
