My son's 12th bday is this friday and am making huge batch of chili in the crock pot for frito pie...any good and easy ideas for something that would accompany this?
We are having cake, of course.
ALSO...planning on playing Flashlight tag at night. Any other really good games that come to mind for that upper elementary age group? THANKS

Spicy Black Bean Empanadas


INGREDIENTS
* 2 (17.3 ounce) packages Pepperidge Farm® Puff Pastry Sheets
* 1 egg
* 1 tablespoon water
* 1/2 pound ground pork or turkey
* 1 small red pepper, diced
* 4 medium green onions, chopped
* 1 clove garlic, minced
* 1/2 cup tomato sauce
* 1 teaspoon ground cumin
* 1 teaspoon chili powder
* 1/8 teaspoon crushed red pepper
* 1 1/2 cups shredded Cheddar cheese
* 1 (15 ounce) can black beans, rinsed and drained
* 1/4 cup chopped fresh cilantro leaves
* 1 cup sour cream
* 1 cup guacamole



DIRECTIONS

1. Thaw the pastry sheets at room temperature for 40 minutes or until they're easy to handle. Heat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or spray with vegetable cooking spray. Stir the egg and water with a fork in a small bowl.
2. Cook the pork in a 12-inch skillet over medium-high heat until the pork is well browned, stirring frequently to break up meat. Add the diced red pepper, green onions and garlic. Cook until tender. Stir the tomato sauce, cumin, chili powder and crushed red pepper into the skillet. Reduce the heat to low and cook for 8 minutes. Remove from the heat. Stir in the cheese, 1 cup of the beans and cilantro. Let cool.
3. Unfold 1 pastry sheet on a lightly floured surface. Roll to a 16x12-inch rectangle. Cut into 10 (2 1/2-inch) rounds. Top half of each round with 1 teaspoon cheese mixture. Brush edges of pastry with water. Fold over and press the edges with a fork to seal. Place the empanadas on the prepared baking sheet. Repeat with remaining pastry and cheese mixture. Brush with the egg mixture.
4. Bake for 18 minutes or until golden. Serve with sour cream, guacamole and remaining beans.

TIPS

Easy Substitution Tip: Use ground turkey instead of the pork. Add 1 teaspoon vegetable oil to the skillet while browning the turkey.

Make Ahead Tip: Prepare empanadas through step 3. Freeze until firm. Wrap in resealable plastic bag. Bake as directed.

For an appetizer? I in basic terms like munching from a crudite or fruit tray. No recipe needed, trouble-free, and anyone loves it. :) Or, in basic terms roast some tomatoes (use cherry or grape tom. decrease in 0.5), total or halved cloves of garlic, and massive slices of onion & bell pepper jointly till the onion starts off to caramelize. relax it, upload a mild coat of Italian dressing & serve chilly with some crusty bread (regularly to unfold the garlic on). that's yummy. :)

Lil Smokies are always a hit with kids, you can put them out warmed with different bbq sauces and some ranch. (kids seem to LOVE ranch)

Chicken breasts, cut into strips, dipped in egg wash and breaded then fried til done....You can season them like buffalo wings or leave them plain....put out various 'dips' ---if plain but out bbq sauces, --- if spiced put our ranch or bleu cheese dressings.

My daughter insists that the Goldfish crackers would be great....they are small, come in various flavors and kids love them.

Mini tortilla wraps - you can put cheese, pepperoni, bacon, tomatoes, lettuce, peanut butter and jelly.......you can put almost anything in these......just keep them smaller in width. Wrap and keep tucked with a toothpick, cut into smaller portions ...

Something cool and light to balance the hot and heavy. Watermelon cubes are my first choice. Jicama (sp?) and carrots or something like that would also be good. It's something crunchy that kids usually like.

Cut up veggies such as brocolli, carrots, cucumber slices, and bell peppers and serve with ranch dressing.

how about a nice green salad ? and some french crusty bread . what about taking them to skateboard park or something of that nature. good luck and god bless.
