I have about 10 regular size carrots in my fridge, I figure I better use them before they aren't any good anymore. Any easy recipes that I can make? Not carrot cake, or like a roast. Hopefully something that just requires carrots nothing that much bigger.

It would have helped if you specified a girl or boy, but here are a couple suggestions. Again, I am assuming you are asking for replacement ideas for a 'regular' cake. 1) BOYS: Get a new / clean dump truck. Take already cooked 'Brown' (chocolate or dark spice) cake or Brownies, hand rip them into lg pieces. Place 1/3 of the pieces into the back of the truck, top with chocolate pudding -- continue layering so that you end up with pudding on the top -- then top it with crushed oreos -- looks like a pile of dirt in the truck. Instead of serving with a spoon -- use a clean toy shovel. The kids really got a kick out of it. 2) GIRLS: Take a Med size bowl (or ring mold) and fill with Jello (4-5 small boxes -- different flavors/colors) -- This will take some time because each colored layer must set up before you add the next one. When all 5 (or so) layers are set, carefully dip the bowl in hot water, making sure the water does not come in contact with the Jello and Unmold onto a platter - place in refrigerator to reset. It should look like a rainbow. After a little while, you can top the jello with Cool Whip -- then you can serve as is (cut into 'cake' slices) or use it as a Barbie doll 'skirt' -- you will need to carefully make a hole in the middle (unless you used the ring mold) so the legs will slide in without breaking your mold. ENJOY!!

2 cups raw carrots, shredded
1/4 cup raisins
1 tablespoon low-calorie mayonnaise
3 tablespoons plain low-fat yogurt
1 package Sweet 'n Low

Combine mayonnaise, yogurt and sweetener.
Stir until smooth.
Add carrots and raisins.
Mi x well and chill.

Glazed carrots with Basalmic Vinegar
makes a good carrot side dish

Trim and cut your carrots in half lengthwise, you can cut horizontally to make them shorter in length if you desire.

You will need:
2 tbsp olive oil
6-8 cloves garlic
1/4 C basalmic vinegar
salt and pepper to taste

Slice the garlic cloves and begin by sauteeing them in the oil in a large pan or skillet--one that will accomodate the amount of carrots you have. Add the carrots and stir to coat with oil. Saute until they are soft and slightly caramelized (about 10 mins over med heat--you can cover, but watch that they don't overcook). Do not reduce heat, but add the vinegar and stir until the liquid evaporates and the carrots and garlic are well coated. Reduce heat, salt and pepper to taste, stir well and serve.

Peel the carrots & cut into chunks. Toss with a little bit of olive oil, salt & pepper. Put on a baking sheet & roast for 30-45 minutes until carmelized. Serve.

Clean them up nice, and then cover them with water in a pan. Boil them til they are just about as soft as you like, and then drain and dump in a microwaveable bowl. Add a bit of butter, some salt and pepper, and a sprinkle of brown sugar. Zap in the mic until they suit your taste.

You can also add to a baked potato, just tack on a couple minutes to the microwave time...when they are all done, smush together and eat with butter or however you load your tater.

These are also good just raw, dipped in ranch dressing or another fav dressing or dip, or peanut butter...

OR you can shred them in the food processor, add some mayo and raisins for a sweet treat.

I love this: cut carrots and pressure cook for 3 minutes, spray with " I can't believe it's not butter" and sprinkle with dill weed. YUM!
