My best friend doesn't cook on a regular basis, but what she does is find the weirdest thing and learn how to make that.

She did fortune cookies once...I'm sure they aren't that hard.

If you have a little skill you can try a quiche or a cheesecake or a yeast bread, maybe a fancy braided bread or some monkey bread or sticky buns.

Quick breads are good for beginners, you can vary up the ingredients, add different fruits and veggies, as well as nuts...to make your own thing. Pound cake.

You can try a fancy layer cake, and brush up on decorating skills...most people don't do that very often.

You can make a jelly roll or a torte or petit fours (tiny little layer cakes) You could try to duplicate something you ate before like Twinkies or fav snack cake.

Bagels are a unique baking project, so are pretzels.

Cobblers are a good way to get started in baking. They don't require a lot of precise measurements and there aren't any expert techniques involved. Here is a good recipe.

Melt half a stick of butter in a 9 inch square pan and set aside. Combine one cup of flour with one cup of sugar, one and a half teaspoons of baking bowder and a touch (a very small pinch) of cinnamon. Whish these dry ingredients to combine. pour in two thirds of a cup of milk and whisk until you have most of the lumps out of your batter, it will be relatively thick. Pour this batter over the butter in the pan. Then sprinkle the top with you favorite fruit. Blackberries, blueberries, peaches, nectarines all work very good and can be found ni the frozen food section this time of year. Bake ni a 350 degree oven for about 45-50 minutes and you have a great cobbler. Serve with a touch of vanilla ice cream.

How about these?
Holiday Squares
1 1/2 cups sugar
1 cup butter
4 eggs
2 cups flour
1 Tablespoon lemon extract
1 can lemon pie filling
confectioners sugar for dusting

On medium speed, gradually add sugar to butter to cream. Add eggs one at a time to the mix. At low speed, add flour and lemon extract. Pour batter into a well greased jelly roll pan. With a knife score the batter to mark 20 squares. Place one teaspoon of pie filling in center of each square. Bake at 350 degrees for 45-50 minutes. While still warm sprinkle top of cake with confectioners sugar. I have also used different flavors of pie filling to make this recipe all are equally good.

start with something easy like an all in one sponge

equal amounts
6oz self raising flour
6oz caster sugar
6oz butter
3 eggs
few drops vanilla

mix together and put in two greased cake tins line bottom with greaseproof paper bake for 20 - 25 mins if you want choc add one tablespoon cocoa on place of one tablespoon flour.

tons of things to do the fill with butter icing or cut both in half and transform into gateaux sponge then fresh cream then sponge then choc cream then sponge cover the lot in cream roll the edge in flake cover top with strabs or tinned orange instant heaven and not hard

For dinner? Supreme Chicken

Four to six boneless skinless chick breasts, cut crosswise
Swiss cheese
One can cream of mushroom soup
One can cream of chicken soup
Swiss cheese
Any kind of boxed or packaged stuffing
1/3 to 1/2 cup melted butter

Preheat oven to 350
Cut chicken breasts crosswise and lay in a sprayed glass cooking pan
Place slices of Swiss cheese over them
Mix soups together and pour over entire pan
If boxed stuffing, mix stuffing and flavor packets together and spread over top of all the above stuff
Drizzle melted butter over all

Bake one hour uncovered.
Let rest about five minutes.
Spatula out individual chicken pieces with the goodies on them.

Easy, fast, little clean up.
