I had this recipe and can't locate it. They are the best Sugar Cookie I have ever eaten!
Once the dough was made it had to be refrigerated overnight. Then it is taken out of fridge and you make balls about the size of reg. meatballs. When the cookie sheet is full of these balls, the bottom of a regular drinking glass is used to flatten them out. The bottom is first dipped in a bowl of sugar.
I have tried to find it on Net but no luck. I keep running into this word: Pepparkakor, but these are ginger snaps and that is not what the recipe was. It was Swedish Sugar Cookies.
Thanks to all and I will be ecstatic if anyone else has used this recipe and still has it!!

This is from my cookbook called notes From a Scandinavian Kitchen by Morry and Florence Ekstrand:

SUGAR COOKIES

Cream together:
1 c white sugar
1 c brown sugar
1 c shortening (half butter)
Add:
2 eggs, beaten
Lemon and vanilla flavoring
Sift together:
3 c flour
1 tsp soda
1 tsp cream of tartar
salt

Mix all ingredients together thoroughly. Roll in little balls, press down by dipping a glass in water and then in sugar. You need to dip the glass in water only once or twice for a batch, but dip it in sugar for every cookie. Bake 8 to 10 minutes in a 350º to 375º oven.

It doesn't give me the Swedish name for the cookies - just calls them what I said above.

Hope this helps. It doesn't say to refrigerate overnight but I'm sure you could.

The refridgeration overnight is partly to help with humidity and also makes it easier to work with the dough...it doesn't have to be done with the sugar cookies, its just easier.

Otherwise, I believe You can use ANY sugar cookie recipe that you find that is nice......

Any of them can be either rolled out or flattened with a glass dipped in sugar...the flattened ones come out thicker, fluffier and flakier...(much better in my opinion) the rolled ones come out different.
