I bought a Pillsbury brand boxed lemon cake and I don't know what kind of frosting goes with it. Please help!

I made a lemon layer cake and between the layers put in lemon curd for an extra punch of lemon flavor. You can buy this at the grocery store- in one of mine it's in the baking isle and in the other it's with the jams. Lime curd may also work well here for an extra citrus punch.

Then to cool it off/lighten the flavors and make sure it didn't get too sweet, I made home made whipped cream from heavy cream- sweetened cool whip would i think be too much. I added lemon zest, 1 tablespoon of powdered sugar and 1 packet of unflavored gelatin per cup of whipping cream to stablize it (it stored in the fridge fine for three days after- if you skip the geletin the whip cream will begin to break down and the cake won't last but a day). I used this on the top and sides of the layer cake.

I personally love chocolate cream cheese frosting...you can buy it or make it.....


Recipe:
INGREDIENTS:
1/4 cup butter, softened
8 ounces cream cheese, softened
3 ounces (3 squares) unsweetened chocolate, melted
dash of salt
3 cups confectioners' sugar
1/3 cup half-and-half
1 teaspoon vanilla extract
PREPARATION:
Cream together the butter and cream cheese. Add melted chocolate, salt, sifted confectioners' sugar, half-and-half, and vanilla. Beat until smooth and spreadable.


OR

Chocolate Butter Frosting:

INGREDIENTS:
1/2 cup soft butter
1 pound sifted confectioners' sugar (about 4 1/4 cups sifted, 3 3/4 cups unsifted)
dash salt
1 teaspoon vanilla extract
3 squares melted unsweetened chocolate
3 tablespoons heavy cream or half-and-half (more or less)
PREPARATION:
Cream soft butter; gradually add sifted confectioners' sugar. Add dash of salt, vanilla extract, melted chocolate, and about 3 tablespoons of cream. Beat until smooth and spreading consistency, adding more cream if necessary.


BUT, you can go to www.about.com and look up many different frosting recipes, (as well as almost any other food recipe you can think of)

Or try www.bettycrocker.com they have some great recipes and ideas of what goes best on different cakes.

Just remember, glaze is a thin, sweet covering
frosting is thicker, what most people are used to
icing is the thickest, usually reserved for formal cakes, decorated cakes etc

You could use nuts, or certain spices. Fruits that have a nice tangy taste to it would be good to tie into the sweetness of the cake and icing too. You could add some chocolate or white chocolate. You don't want it too sweet though so don't add too much chocolate if you decide to do that. I think nuts on top of the icing would be good and maybe some in the cake mix too. Just make sure you pick something you will like to go inside the cake. The cake and flavor has to scream your personality and taste. It helps most cooks with what they cook/bake. :)

I made the best cookies out of that cake mix! The recipe is on the side. I just made a glaze out of powdered sugar and milk and fresh lemon juice to taste. Then, poured on top of the cookies. They were ate in a snap and everyone wanted the recipe (brought to a potluck) :)) Very easy as well!

Try a simple lemon glaze. Combine lemon juice with confectioner's sugar until you get a pourable consistency.

vanilla with shredded coconut is a nice icing on lemon cake. And so pretty too...love it!

my moms chocolate frosting (yummy)

1/4 cup butter melted
1/2 cup cocoa
1/4 teaspoon salt
1/3 cup milk
1-1/2 teaspoons vanilla
3-1/2 cups confectioners sugar (sift if lumpy)
combine butter,cocoa,salt; then add milk and vanilla. mix in sugar in three parts. mix until smooth and creamy

Why not try like vanilla or chocolate.
i personally love cream cheese frosting.
