I am tired of turkey for Thanksgiving and want to elegantly change it up by serving goose. I have Never made it before and need your best recipe PLEASE!

Because a goose, like a duck, has a lot of fat, be sure to cook your dressing separate from the bird. Also, pierce the skin quite a bit as it cookes to drain out all the extra fat.

Then you would just bake it as you would a turkey but less time. I believe the goose wrapping should tell you about how long to cook it and the time.

Also remember, there is more meat on a turkey than a goose so depending on how many people you have, you may need 2.

The recipe I found in my Joy of Cooking cookbook has the goose stuffed with a apple, prune, chestnut or other dressing and it has the cavitity filled with the dressing. It says to allow one cup dressing to each pound of bird and to place the bird on a rack uncovered, allowing 25 minutes to the pound. Preheat oven to 450º. Just as you place the bird in the oven, reduce the heat at once to 350º and pour off the fat as it accumulates. The book says pricking to release the fat is imperative. And, unless the goose is under ten months old, it is apt to be tough. If older than 10 months, braise it rather than roast it. Your dressing will be greasier cooked in the bird than when cooked in a turkey. To help flavor your dressing if doing it on the side, take the goose neck and place it on top of the dressing. As it cooks, it will flavor the dressing without adding all the fat.
