Hello, My step father has been searching for a receipe for a potoato dish that his mother used to make.He knows that she used left over mashed potoaes and parsley.He also remembers that she used a knitting needle and added a small piece of mozzarella inside prior to frying them in a skillet.He said they were shaped sort of like lady fingers but smaller.Does anyone have a receipe for something similar to this.My dad is 76 years old and I'd like to make these for him for Christmas Eve....Thank you

My old mom did prepare the same dish for me when I was kid. I guess you cannot find this recipe anywhere since this is coming out from the times when people was forced to invent something to make use of the (very rare !!!) leftovers.
As far as I can remember, with the support of my mother-in-law who is still alive, here's a receipt that should fit your request. We call this "Crocchette di patate".
I apologize if I'm not using proper terms but my mother tongue is Italian; I wish you can understand me....!

Ingredientes (x 4 persons)
1 Kg ( abt. 2 lbs) of mashed potatoes
150 grams of Mozzarella
4 Eggs
Superfine flour
Breadcrumbs
Chopped Parsley
1 Nutmeg
1/2 White Onion
40 grams butter
Extra-virgin olive oil
Salt
Pepper



Here's the recipe :

In a saucepan let the butter melting on the fire and after add the onion, finely minced. Add the mashed potatoes with a pinch of grated nutmeg and of chopped parsley; by keeping a low fire leave the potatoes dry by stiring energetically with a wooden spoon.
Remove from the fire and add a bit of salt and pepper. Then, add a yolks. Stir until the yolk is well mixed with the rest and then add another yolk. These egg white must be thrown away !! Stir again the whole until is well combined and then prepare the croquettes by using yr palms. Keep them flat and slightly sunken in the middle. Put in this hollow a small piece of mozzarella ,close the flat croquette by folding and then roll it by hands to get the shape of a finger. Beat the remaining 2 eggs (complete with their white). Pass the rolled croquettes in the flour, after in the beated eggs and then in the breadcrumbs.
Put the croquettes in abundant boiling oil and when they are ready put them on a try on which you should place a blotting (kitchen) paper to dry them. Sprinkle over the croquettes the remaining chopped parsley and serve them hot.

Could it be mozzarella stuffed gnocchi? Gnocchi is made with (leftover for us) mashed potatoes.
