People are getting too elaborate here. King Oscar Sardines in mustard sauce on rye crackers or Swedish Flatbread, with a thin slice of Bermuda Onion and a bottle of a good dark beer work fine for me.

My father gave me a wonderful recipe with sardines. The way he loves them the most. He dices onions, mashes the sardines, adds some black pepper and used to add just a little salt, and then mixes in mayonnaise. He would either have them on Ritz crackers or regular soda crackers. Yummm! That's how I even eat them today - and give them to my hubby. My father is now 86 yrs old and still eats his sardines that way. Once in awhile I'll add an extra treat with the Ritz crackers and put some cream cheese on the cracker first and then a dollop of the sardine mixture.

Sardine Sandwich Spread

This Scandinavian-inspired spread comes to us courtesy of Andrew Weil, M.D., who offers this and other delicious, healthful recipes it at DrWeil.com. Sardines are rich sources of omega-3 fatty acids, vitamin D, and calcium. This spread is delicious on dense, thin-sliced pumpernickel bread or whole grain crackers.

Serves 1 or 2



1 can Vital Choice sardines

1-2 teaspoons Dijon mustard

1 tablespoon onion, finely chopped

1/2 teaspoon fresh lemon juice



1. Drain the fish and mash them with a fork in a bowl together with the mustard.

2. Add the onion and lemon juice.

OMG...it's not that complicated at all for godssake!
1)dice some garlic and slice some onions
2)heat up the wok/frying pan, melt a tablespoon of butter in it (to replace oil, coz it tastes better this way)
3)when the butter is all melt and heated up, just throw in the garlic & onions.
4)then put in the sardines (mash it)
5)add on some tomato ketchup or chilli sauce (and a bit of salt & sugar if you like it that way)

Voila! Your sardine & onion filling is done.
--->Then, spread over some mayonnaise on two slices of bread before you put in the filling. You can always sprinkle some Parmesan cheese on top of it if you're a real cheese lover. If you love veggies, you can also put a few slices of fresh cucumber or salad in it.

Hmmm...well, my first thought was that you would SMELL a sardine and onion sandwich before you would HEAR of one...

When i was a kid, this little old lady that baby sat my brother and I used to make onion sandwiches. she used white bread coverd in mustard then sliced onions and thats it. She was a nice lady and took good care of us. I think of her everytime I smell onion now.

Two slices bread, mayo on both. place sardines on one then slather sardines with mustard. (some tabasco too for a kick if you want) then slivers of purple or sweet onions on top of mustard. salt and pepper to taste, cover with other slice of bread. can also be "open-faced". enjoy with beer or any favorite beverage. (this was actually my lunch two days ago.)

My dad always ate his with a thin slice of good onion and some spicy brown mustard on good whole grain bread. As for me, huh uh! lol

simple, really:

One tin sardines, drained
1 tbsp capers, chopped exceeding fine
3 tbsp sweet (Vidalia) onion chopped fine
1 TBS cornichons chopped fine
4 TBS real mayonnaise
juice of 1/2 lemon
2 TBSP dry white wine
I hard boiled egg sliced fine

combine dressing ingredients whisking well, chop sardines and mix with dressing,serve on generous slices of sourdough bread, garnish with hard boiled egg...
Pinot grigio would go well with this one...
