I am anvid cook. And, I spend most my time in the kitchen preparing meals and baking. I've just started my own business doing the same as well. I've been using an assortment of pans for years. One cast iron, two stainless steel, and the rest tin or nonstick. I reach for the stainless or cast iron all the time.
It's come to the time to decide and invest in a cookware set. I can't decide if I want stainless or cooper. I do have a copper bottom pan that I use for chocolates, milk, and melting butter. But, I've not had experience in cooking a meal with it.
What's your experiance? I really like Ruffoni (or the look at least) as I've not actually cooked with it. I also would like All Clad stainless steel...maybe even copper. Would appreciate your insight!

If you're looking for something to "invest" in, there's no better investment than cast iron. It's practically indestructible as you must know since you use it. I like it because it's nonstick (forever with proper care) and safe to use at the same time. I don't think there's any one type of cookware that's perfect for all types of cooking, but a good selection of cast iron certainly has a place in your investment.

I also spend most of my time in the kitchen and used to cook in a diner. Over the years I have used just about every line of cookware. For my home I love Cooks Collection sold at JC Penneys, I also like farberware and Onieda. The heavier the bottom The better to cook in. I have also learned (the hard way) that sometimes a $150 set of cookware will outlast a $600 set of cook ware

This is just my opinion. I'll never buy copper. It looks nice and conducts heat well, but you probably know you're limited in what you can cook. Nothing tomato based, nothing acidic. If you're trying to decided between the two, I'd go with stainless steel.

I swear by my All Glad stainless ! It seems expensive but it will last forever, It will outlast me. AND it is made in the USA which I like even better and is why I bought it in the first place, years ago, now I'm glad I did. Would recommand it to everyone. Buy USA made products!

Stainless Steel definately. You can cook anything in it. Copper has its limits. I have to agree with you on cast iron, though, hands down tastes the best and wears the best (if treated properly). Good Luck on your entrepreneurial endeavor! And as far as kitchen utensils and small appliances go, I vote for KitchenAid... Can't wait to get my 5qt. blender for Christmas (He He)

I say stay with the cast iron! I have part of my grandmothers set, that she taught me how to keep seasoned properly, and it is as non-stick as Teflon! And will last forever :-) One skillet I have is over a 100 years old and still looks new.

Cast iron skillet for skilllet things. Circulon for most other things. Circulon Chef's Pan my favorite for soups, roasts, stew, etc. Heavy bottom, sloped sides. It can be used on top of stove or in oven.
