annatto seed was added to Cheddar cheese during the gold rush to signify of American wealth so it looks like blocks of gold. Cheese is normally white like milk.

Milk contains a yellow pigment which is derived from grass. The color is in the fat fraction of the milk. When making cheese, the fat gets more concentrated which results in a yellow color. That is the same reason that butter is yellow.

Some is yellow because color is added for that. Some is orange for the same reason. Some is marbled orange and white because they swirled together colored and uncolored. Some is white because no color is added. Some is light green because it has a high content of herbs.
If they thought that purple would sell they would color it like that.
