One of my favorites actually. I like to just saute mushrooms and onions ( green onions preferably ) mix with cooked rice and stuff the birds. Simple and good.
Be lazy like me and get some cornbread stuffing mix. Most are pretty good even if not as good as homemade.
And for a change dry some bread or use stale bread. Break into fairly large pieces about 2 cups. Saute some green apples and walnuts in butter until the apples just start to soften but are still firm. Mix with the bread and 1 egg. Moisten with canned chicken broth and stuff. Sound weird to some folks but is very traditional for Germans in duck or goose and is good with chicken or even pork chops.

I saw a great cornbread stuffing and cornish hen recipe on the Food Network - Barefoot Contessa show on TV. Ina Garten made a simple, wonderful version of exactly what you asked for! Go to foodnetwork.com and do a search for Cornbread Stuffing. Then look for either Ina Garten or Barefoot Contessa where it shows whose recipe it is. Good Luck!
