With the holidays coming up there are always packages that need to be shipped. You can use them as packing material.
You can also donate them to a children's organization (scouts, etc.) if they are collecting them to recycle
Many grocery stores have deposits in which to place bags for recycling. Thrift stores use donated plastic bags to place purchases. You can line a small trash can with them. Use them to pick up doggy-do when you are out walking with your pups. Use them to wrap up leftovers rather than buying plastic wrap. Use as a holder for ice cubes inside a towel when you twist your foot. Slide the armrests of your car seat through the holes in the bag and use as a car trash container. Tie up your tomato plants to keep them off the ground.

There are lots of uses for them. Here are a few. I have a dog, and plastic bags always go with us on walks. If you don't have a dog, a friend might like some bags (sometimes I run out and wish someone had saved some for me) I also use them as liners for small garbage cans. If I had extra, I would give some to our library, also our local thrift store takes them. People who have garage sales might find them useful. I also reuse them at the grocery store.

All the above are great answers, but I saw a craft to do with the kind of bags you get from department stores that was so cool, I had to tell you about it. I wish I knew the website I saw it on. It won't work with the grocery sacs, because they are too thin.
Take a few of the store bags and put them to together (you could of course, break open the seams if they are all different sizes). Put them between wax paper and iron them with your iron set on the lowest setting. They will melt together creating an interesting pattern and will create a really strong bag that you can use for anything. If it is flat, you could use it to wrap sandwiches.
I haven't tried it yet, because I don't have enough bags, but can't wait to do it.

I have a cat, and it's good when cleaning the litter box.

I have brought them with me to grocery stores and reused them. Mostly I use a reusable bag I bought at Green Festival, but sometimes the checker will put stuff in a plastic bag to separate it from other things, and I can use that.

I take my lunch to work in them.

When dyeing my hair, I tie a plastic bag over my hair. Put the bag over your head and tie the handles at the nape of your neck. Push the edge of the bag to your hairline. This only works if you have short hair.

And many stores to have recycle bins for platic bags.

Some grocery stores have places where you can drop them off for recycling. Or you can take them back to the store and use them again instead of getting more bags. But don't throw them away! You can also use them around the house.

Most supermarkets will take them back. My market pays 1 cent for each bag returned. Use them in bathroom trash cans, use them to scoop up Fido's mess in the backyard.

Bring your own canvas bags to the grocery store next time.
