The rice is nearly always plain white rice or parboiled rice, steamed or boiled with only salt. The rice used with gumbo is a long-grained rice that sticks well to itself and does not disperse in the gumbo.

The ratio of soup to rice is also a point of contention. Some prefer "damp rice" and some only add a minimal amount of rice to a bowl of broth. This is strictly personal taste.

No rice in true gumbo. Try this recipe.

1/2 Cup Vegetable Oil
3/4 Cup A.P. Flour
4 Tbsp Creole Seasoning
1 Cup Onions, Diced
1/2 Cup Green Bell Pepper, Diced
1/2 Cup Celery, Diced
1 1/2 Cups Andouille, Cubed
1 Cup Fresh Okra, Cut into 1/2 inch rounds
3 Tbsp Garlic, Chopped
6 Cups cold Chicken Stock
3 Fresh Bay Leaves
1 1/2 Cups Bite size pieces of Raw Chicken Thigh*
2 Tbsp Worcestershire Sauce
Hot Sauce to taste
Kosher Salt to taste, if necessary
2 Tablespoons Italian Parsley, finely Chopped
1/4 Cup Thinly Sliced Green Onions

I'm not sure what stickler is.... But Minute Rice is never acceptable. Just make a pot of long grain Mahatma, like they do in So. Louisiana.

And no, rice is made separately, put in the bowl, then topped w/ gumbo. (Unless you're in a restaurant, they willl top the gumbo w/ rice for presentation purposes.)

please do not use minute rice. this is coming from a true creole born and raised in New Orleans. And to the person above me, gumbo is SERVED WITH RICE. the only time we eat it without rice is when there is no more rice. lol. Anyway, any rice besides minute rice is fine honey.

i thought that the rice was in the gumbo, it would be more like minute rice but your sauce would hold everything together. That is just me take on gumbo....
