Gnoki's are wonderful. It's made with potaoes and flour. The ready made's are not tasty. I get lots of great recipes on the Net. Just type in the name like "Italian recipes."

Gnocci, you'll never find gnoki. I buy it frozen and put pesto sauce on it. Serve as a side dish to ham or chicken.
Risotto
Caseoula
Polenta
My grandparents are from Northern Italy, not so much pasta/tomato sauce there.

No, no longer likely. In Italy the yank pizza isn't pizza they way they make it. to call pizza Italian is to call the hamburger German. optimistic, it originated there yet in its cutting-edge incarnation it is American. Spaghetti, then, is in all likelihood the main time-honored Italian dish.
